Easy, nutritious and super tasty!

Inspired by verseoogst.nl, but with a twist and made vegan.

Vegan spicy cauliflower wraps

Ingredients:

  • Half cauliflower
  • 3 Avocado’s
  • Paprika powder
  • 4 small tortillas
  • 1 table spoon of olive oil
  • Cayenne pepper, as much as you can handle 😉
  • A bit of black pepper
  • 200 gram red cabbage
  • Half red onion
  • Garlic powder
  • 3 cloves of garlic
  • Half a lime
  • 20 gram fresh coriander
  • A pinch of salt
  • 125 gram vegan sour cream

Instructions:

1. Preheat the oven to 220 degrees.

2. Marinate the cauliflower in olive oil, paprika, cayenne pepper, garlic powder, and salt to taste. 

3. Cut the red cabbage and red onion into thin strips.

4. Finely chop the coriander.

5. Divide the marinated cauliflower florets on a baking tray, add the garlic cloves and roast in the oven for 25 minutes.

6.  In the meantime, mash the avocado with the lime juice and combine with the sour cream and coriander. You can also serve the sour cream alongside the avocado. Season with salt and pepper to taste. 

7. Warm the wrap in a pan with a little bit of oil, both sides

8. Place the avocado mixture, cauliflower, red cabbage, and red onion on top of the wraps.
