Banana Bread is a soft and fragrant typical American cake in the shape of a plumcake; based on flour, eggs, butter and banana puree, which give a moist and very soft texture to the bite! a delicious goodness that was born in America in the 30s to recycle overripe bananas, immediately depopulated on the tables of American citizens for brunch and breakfast; it soon conquered half the world just like Muffins and Pancakes! So much so that it even deserves a day of celebration: National Banana Bread Day, which is celebrated on February 23rd. The preparation of this banana bread is really simple, all you need is a blender and a bowl. Being vegan, sugar-free and even gluten-free, this dessert is suitable for practically everyone, and is great if you want to play it safe. It lends itself perfectly to breakfast and snacks. 

Vegan banana bread

  • 3 Bananas
  • 260 grams of Oatmeal
  • walnuts
  • Vegan chocolate chips 
  • 1 sachet of Yeast for cakes
  • 2 teaspoons of Apple cider vinegar
  • or: 2 teaspoons rice vinegar
  • 200 milliliters Water
  • 1 teaspoon Cinnamon
  • vanilla
  • 1 pinch of Salt


Preheat the oven to 170°C, in static mode.

Peel the bananas (they must be very ripe) and put them in the blender together with the dates. Add the apple cider vinegar, water and a vanilla pod. Blend until you get a thick and homogeneous mixture.


Separately, in a large bowl, pour the gluten-free oatmeal, baking powder, a teaspoon of cinnamon and salt. Mix quickly to distribute them well and pour the banana mixture you just blended, a little at a time, mixing until everything is smooth and ready to bake.


Also add the vegan chocolate chips, mix one last time and transfer into the mold (mine was 12×28). Decorate with a few flakes of oats and a few chopped walnuts and cook in the oven for 40 minutes. storage

This banana bread can be stored for up to 3 days in an airtight container and, if you like, you can also freeze it: I often freeze it already cut into slices, to always have a healthy snack close at hand. To defrost it, just take it out of the freezer a few hours before consuming it.

Quick and easy to make, it will only take a few minutes of your time! The secret to a perfect result is to use ripe and soft bananas, preferably if they have a dark skin and it is okay if they are slightly blackened in some places; but not too black! Otherwise the cake loses its typical fruit scent! You can leave it simple or, as in my case, add drops of dark chocolate to obtain a chocolate-flavored banana bread – bananas that I recommend! Trust me! Give an extra gear to dessert! From this basic version you can make many delicious variations! Add nuts of your choice like walnuts, peanuts, cashews, almonds, hazelnuts! Both inside and on the surface to obtain a delicious crunchy topping! Just like apple pie, it’s perfect as a breakfast dessert on its own, or to be dipped in milk! Great for a healthy and energetic snack or to carry to the office or school for snacks during the day!
