The banana bread originates from America from arround the 30’s. It was a clever way to use up overripe bananas and it quickly became a brunch and breakfast favorite, just like Muffins and Pancakes. So beloved, it even has its own day of celebration: National Banana Bread Day on February 23rd.

But here’s the exciting part – you can whip up this classic American treat. We’ve taken it up a notch by making it vegan and sugar-free. And even then it’s practically a dessert for everyone!

Ingredients

  • 3 Bananas
  • 150 gram of flower (normal, almond, peas, whatever you like) you could also add some oatmeal
  • walnuts
  • dates (if you like it sweet)
  • Vegan chocolate chips 
  • 1,5 sachet of Yeast for cakes
  • 2 teaspoons of Apple cider vinegar or 2 teaspoons rice vinegar
  • vanilla
  • 1 pinch of Salt

STEP 1

Preheat the oven to 170°C.

Peel the bananas (they must be very ripe) and mash them very well with a fork. Now add all the other ingredients. Mix quickly to distribute them well.

STEP 2

Decorate to taste with for example a few flakes of oats, chocolate or a few chopped walnuts and cook in the oven for 40 minutes.

A good way to check if it is done is by putting for example putting a chopstick in and if it comes out dry to semi dry its done. If it is still very wet from the inside you can leave it a bit longer in the oven.

This banana bread can be stored for up to 3 days in an airtight container and, if you like, you can also freeze it: I often freeze it already cut into slices, to always have a healthy snack close at hand. To defrost it, just take it out of the freezer a few hours before consuming it.

Quick and easy to make, it will only take a few minutes of your time! The secret to a perfect result is to use ripe and soft bananas, preferably if they have a dark skin and it is okay if they are slightly blackened in some places; but not too black! Otherwise the cake loses its typical fruit scent! You can leave it simple or, as in my case, add drops of dark chocolate to obtain a chocolate-flavored banana bread – bananas that I recommend! Trust me! Give an extra gear to dessert! From this basic version you can make many delicious variations! Add nuts of your choice like walnuts, peanuts, cashews, almonds, hazelnuts! Both inside and on the surface to obtain a delicious crunchy topping! Just like apple pie, it’s perfect as a breakfast dessert on its own, or to be dipped in milk! Great for a healthy and energetic snack or to carry to the office or school for snacks during the day!
